Since its inception in 2013, H&K Co. Ltd. has sought out the best products Japan has to offer. In 2019, we developed our original brand, “Hatsukokoro.” The word “Hatsukokoro” comes from the Japanese proverb “don’t forget your original intention.”
Due to the contracts stipulated between the brand and the blacksmiths, the identity of certain blacksmiths sometimes remains a mystery, which makes things a little more exciting.

Handcrafted, the handle and saya are made of hybrid acacia burl with resin and oyster mother-of-pearl inclusions. The handle has a magma resin interlayer.
The Hatsukokoro Ryusui (流水, flowing water), made by the renowned maker Nigara in Aomori, Japan, is a masterful blend of art and functionality. Featuring a unique nashiji Damascus finish that resembles flowing water, this knife is visually stunning and a standout in any kitchen.
Its core is made of Aogami 2 steel, known for its exceptional sharpness, edge retention, and ease of sharpening. The knife features a very thick spine at the heel with a drastic taper, reminiscent of Sanjo knives, enhancing its strength and precision. Thanks to the weight imparted by the thick spine, the Aogami 2 steel-formed edge has very little hesitation when cutting through food.
