The Nakagawa Shirogami Honesuki 150mm is the Japanese version of a boning knife. The Honesuki is primarily designed for preparing poultry, but it also excels at butchering and filleting fish.

Nagakawa-san a fait sont apprentissage avec le légendaire maître forgeron Kenichi Shiraki qui a créer la marque Shiraki Hamono, jusqu’à en devenir le chef quand Shiraki-san s’est retiré. En 2005 Nakagawa-san a changé le nom de la marque à Nakagawa Hamono.
Nakagawa-san est aujourd’hui un des forgerons de renom quand on parle de coutellerie artisanale haut de gamme. Il travaille tout type d’acier, mais la où on peux apprécier toute sa maitrise des traitements thermique c’est avec les aciers Ginsan, Aogami #1 et Shirogami #1.

The handle is handcrafted from stabilized and dyed black ash burl, featuring coffee bean inclusions, with a stabilized and dyed boxelder burl ferrule.
This blade is forged from Shirogami #1 steel, a type of Japanese white steel. This steel produces an extremely fine and sharp edge. It offers excellent edge retention thanks to its hardness of 62–63 HRC, and it is remarkably easy to sharpen.
