The gyuto was traditionally used for cutting large cuts of meat. Today, it is a knife suitable for a much wider range of uses.
This knife was forged by Master Saji himself, Ilya, about five years ago.

Takeshi Saji, who has been retired for three years, was one of the pillars of Japanese cutlery. At 86 years old, with 56 years of experience in blacksmithing, he is a pioneer in the creation of extraordinary Damascus steel patterns.
In 2000, Saji-san, along with other pillars of the industry such as Katsushige Anryu and Hiroshi Kato, founded the Takefu Knife Village. His goal was to bring together blacksmiths from the area so they could work together and share their knowledge, but also to inspire new generations to carry on this tradition.
Today, many world-renowned blacksmiths work side by side in Takefu Knife Village, including Yu Kurosaki, Yoshimi Kato, Takumi Ikeda, and even Takeshi Saji, among others.

For this blade, I chose a handle that echoes the blade’s colors. It is made of ivory-colored Juma with a flaked finish, featuring red jasper and copper spacers, and an abalone resin ferrule.
This blade is part of the Rainbow Damascus series, named for the colorful Damascus pattern that characterizes the blades. Saji-san added alternating strips of brass and copper during the steel folding process to achieve this pattern. Despite the presence of copper and brass, this steel is stainless. The blade core is made of Aogami #2 steel (Japanese blue steel), with a hardness of 62-63 HRC (Rockwell Hardness “C”). This alloy is less reactive than Shirogami steel, but it retains its edge better, while remaining very easy to sharpen with a whetstone.
