Since its founding in 2013, H&K Co. Ltd. has sought out the finest products Japan has to offer. In 2019, we launched our original brand, “Hatsukokoro.” The word “Hatsukokoro” comes from the Japanese proverb, “Never forget your original intention.”
Due to the terms of the contracts between the brand and the blacksmiths, the identities of some blacksmiths remain a mystery—which makes things a little more exciting.

Hatsukokoro Ryusui (流水, “flowing water”), crafted by the renowned manufacturer Nigara in Aomori, Japan, is a masterful blend of art and functionality. Featuring a unique nashiji damask finish that resembles flowing water, this knife is visually stunning and stands out in any kitchen.
Its core is made of Aogami 2 steel, known for its exceptional sharpness, edge retention, and ease of sharpening. The knife features a very thick spine at the heel that tapers sharply—reminiscent of Sanjo knives—enhancing its durability and precision. Thanks to the weight provided by the thick spine, the Aogami 2 steel cutting edge cuts through food with very little resistance.
Handcrafted with meticulous attention to detail, the Ryusui offers exceptional cutting performance, making it a prized asset for professional chefs and home cooks who appreciate refined craftsmanship.
