Over the past decade, Yoshimi Kato has become a world-renowned blacksmith, thanks to his mastery and expertise in forging exceptional kitchen knives. He apprenticed under his father, Hiroshi Kato, one of the pillars of Japanese cutlery. In 2017, he took over the family business when his father retired. Kato-san crafts his blades in the knife-making village of Takefu in Fukui Prefecture.

The handcrafted handle is made of dyed and stabilized birch burl with an acrylic ferrule.
This blade is part of the Kurouchi Damascus series, forged with an Aogami Super steel core. This steel, with a hardness of 64 ±1 HRC, achieves a razor-sharp edge that stays sharp for a long time and is also extremely easy to sharpen. It’s called “SUPER” for a reason. The core is wrapped in Damascus steel, whose layers can be seen on the underside of the blade, while the upper side features a Kurouchi (forged-finish) finish.
