Since its establishment in 2013, H&K Co. Ltd has been searching for the best products that Japan has to offer. In 2019, we developed our original brand “Hatsukokoro”. The word Hatsukokoro comes from the Japanese proverb “don’t forget your original intention”.
As a result of the contracts stipulated between the brand and the blacksmiths, sometimes the identity of some of the blacksmiths remains a mystery, which makes things a little more exciting.

Hatsukokoro Ryusui (流水, flowing water), made by the renowned maker Nigara in Aomori, Japan, is a masterful blend of art and function. Featuring a unique nashiji damascus finish that resembles flowing water, this knife is visually stunning and stands out in any kitchen.
Its core is made of Aogami 2 steel, known for its exceptional sharpness, edge retention, and ease of sharpening. The knife features an extra-thick spine at the heel with a drastic taper, reminiscent of Sanjo knives, enhancing its strength and precision. Thanks to the weight given by the thick spine, the Aogami 2 steel formed edge has very little hesitation in cutting through food.
Handcrafted with meticulous attention to detail, the Ryusui delivers exceptional cutting performance, making it a prized possession for professional chefs and home cooks who appreciate fine craftsmanship
